If you’re anything like me, you’re always looking for new, easy and delicious recipes to feed your family. Today, I am going to share one of our favorites! Taco Soup! It has all the delicious flavor of tacos, but in a warming bowl – perfect for cooler weather! I am not a food photographer, nor do I have good lighting in my kitchen – so forgive the poor quality photos!
Taco Soup
1 undrained can each: corn, tomatoes (diced), black beans, pinto beans
1 package taco seasoning
1 package dry ranch
1 lb ground beef (or, other meat of your choosing)
1 small onion, diced
1-2 tsp garlic
Brown meat until cooked through, add onion and garlic and saute for a few minutes.
Combine everything in a large soup pot, do not drain any of the canned goods. Add 1-2 soup cans worth of water to fill the pot. Simmer at least 30 minutes, I prefer several hours, on low heat. Enjoy with your favorite taco toppings like sour cream, guac, cheese, green onion, olives – whatever you like!
We enjoy serving this with hot cornbread and eating the leftovers with tortilla chips!
